Probably the Quarians. They seem to be the most fleshed out race, other than humans, in Mass Effect. If not that, they are at least on par with the Turians and the Asari.

Other than the Quarians, I would choose the Salarian Turians or Krogan in that order. Not the Asari because I enjoy being male.

Turians,

Imagine:
In the finale, shepard choses to let the turian homeworld be destroyed by the Reapers in order to save earth.
In a joker like segment (If you've played ME2 you'll know what I mean) where, as a turian civilian (maybe Garrus, or a new turian squadmember), you tread through your homeworld as it gets ripped apart by the reapers. :o
Actually that would be cool for any race IMO. But turians have the whole rival thing going on, and being forced to see it from their perspective would be really cool and a kind of slap of the face to all the anti alien shepards. It could also work for batarians.

Actually, now that I think about it, a segment in the final part of the game playing your quarian, salarian, turian, asairi, batarian, etc. squadmates would be really cool, and you could see more of their species.

As it's own game though, still turian (or batarian or drell), since so far the salarians, quarians, krogans and asairi have all got quite a bit of depth and focus.
Of course the volus, hanar and elcor are still sidelined in ME2, altough they would all be incredibly awesome to play as (I AM A BIOTIC GOD!!!!), I doubt it could work without being unintentionnally hilarious.

Turian, because in a way they remind me of Klingons, and I like Klingons.

Also I would like to see what a female Turian sounds like. Bet it would sound pretty hostile when making threats.

Dude, seriously Klingons are more like batarians head wise I don't understand your logic here.

I'm not talking about physical aspects. They have the whole 'big military/rigid social hierarchy/honour system' thing going on. I mean to Turians, pretty much anything goes, as long as it doesn't interfere with your job. I can see a Klingon and a Turian drinking blood-wine together on a Bird of Prey, singing about Kahless. There would probably be a Krogan there, too.

No turians don't drink blood wine dude. Culture wise the krogans are more like klingons. Just the whole clan and fighting going on. Military wise maybe, but I just can't really see the turians being compared to Klingons i just don't make any sense. I'm sorry dude,. I see Krogans or batarian culture, but not turians. Mostly because Turians if you pay attention don't really give a damn about horror. Krogans now thats some serious honor loving spieces. They even head butt each other. Which If I remember klingons head but each other when they are going to combat or honor one another.

The Krogan probably used to be what Klingons are like. But Wrex and Okeer both comment on how modern-day Krogan are often nothing more than simple thugs for hire with no honour and no desire to help their own species. They're all greedy hedonists.

Some aspects of Krogan/Turian culture remind me of Klingons. I mean, let's face it, Turians get ready for battle by having sparring contests (including mandatory betting). Stick a bat'leth in their hands and that's pretty much on par for how Klingons work out the old tension too.

Yarr.

I'd play as a salarian. I don't consider myself to be as fast-thinking and smart as them, on the contrary, but their general nerdy look just fits me the most. That, and I just love those salarians.

Quarian at first, maybe Drell or Turian as the second pick. Last but not least, a Krogan.

I'd be a Turian, so I could make ugly little babies with a Quarian.

Or at least, find out how those nerve stimulation programs work.
