When you're talking about the geth you have to specify whether you're referring to the programs or the platforms.
"Legion" is a unique platform (hardware) that can run 1,183 programs (geth) simultaneously. It was created for the purpose of interfacing with organics, and they created only one because they didn't want to incite organics by making them fear an invasion.
Theoretically they could just manufacture another Legion platform and install another 1,183 programs.
But would the writers really do that? Technically it wouldn't be Legion, but at the same time if it fits the exact same role in the same way...
No, I think if Legion dies in the suicide mission, it should be more difficult to align the geth with Shepard against the Reapers. Assuming of course that's the idea behind ME3, which it may not be.
