I was looking at getting BG:EE, but I'm playing so many games at the moment, I'm waiting on reviews from you guys to find out whether I should buy it or not. I'm still VERY wary of buying new games these days. Bloody ME3.

BG:EE is IMO a pretty good repackaging of a game that's almost 15 years old. It's over the worst of its launch bugs (and there were some really nasty ones) but it seems to be stable enough for most people now. It still uses the AD&D mechanics, which are notoriously punishing and confusing.
The developers were able to get some modders on board, but for the most part, they're contractually obligated not to touch the core game. The decade of mods for BG1 now have to be patched to fit with BG:EE. It's anyone's guess how long that'll take, though I think the more popular mods will be patched within a few months.
Hopefully I haven't scared you off; the game is pretty sweet, and the devs have chosen to add to it rather than mess with the original. There's a stand-alone dungeon crawl called The Black Pits (2-3 hours, fun but nothing too original). There are also 3 new NPC companions, each with his/her own sidequest, voicing, and mini-romance arc (3-4 dialogues, meant to lay the groundwork for a full romance in the BG2 enhanced edition). I like all of them so far.
I'll go into some detail on each of them:
- Rasaad yn Bashir: Lawful good human monk. He's the one who reminded me of a younger Thane: spiritual and thoughtful, but still finding his place in the world. Mechanically weak, but that's because low-level monks are bad in AD&D. Romanceable by good-aligned females.
- Neera: Chaotic neutral half-elf wild mage. Perky, bit of a chatterbox, and IMO 100% adorable. Mechanically effective and well-balanced, though playing with a wild mage involves some save scumming in case something nasty happens from a wild spell. Romanceable by males.
- Dorn Il-Khan: Neutral evil half-orc blackguard. Surprisingly smart and insighful, if unrepentently rotten to the core. Oh, and he has a sexy voice. And he's an absolute BEAST in combat. And I'm kind of in love with him
Romanceable by any PC who completes his sidequest.
tl;dr--BG:EE is good, but still rough around the edges. For anyone who wants an optimal experience (especially folks who have never played the series), I'd say wait a month or two for the mods and patches to catch up. To keep from spamming the thread, I am happy to answer PMs about anything BG-related. Baldur's Gate is my favorite game series ever, and I've sunk close to a thousand hours into it over the years.
