I'm getting a new computer in the upcoming days. Is there anyway that I could save my Mass Effect 1 save game files to a disk, so I could then put them on the new computer and then import my ME1 character to ME2?

Should be pretty straight forward. Just find your ME1 Save folder and copy that to your backup medium. On XP it's My Documents->BioWare->Mass Effect->Save. Copy it onto your new machine somewhere easy to find and you should be good to go. I don't believe the ME2 Configuration Utility needs to have anything other than the save game from the old Save folder, so I don't think you need to have a completely new install of ME1 to be able to import them.
