Trying to be as spoiler free as I can, I have to ask: I just beat the game, and before I did so, I completed all the missions that I came across during the game. I have probably 40 or so hours played, so I've done a lot. I don't know where to go from here and I need some help! Maybe a list of planets that have missions that can be found when scanned? I only ask because, well, I saw the achievement that is awarded by having obtained level 30, but I think I topped level 25. Without anymore missions to do, how do I get level 30?
Is there anything more that I can possibly do?

You can save the game, start a new one, and when you start a new one, import ME2 game

Does that make me continue from level 25? And what about the choices that I made during ME1 and 2? Does doing this only reflect the choices I made from the already imported ME1 character?

I think it only takes your previous ME1 choices into account. They asked me the same questions on the way to the Illusive man, and I had saved the council on that character.

I believe when you finish the game twice (Or once with imported character) you get a special achievement which increases exp by 15% (?). So maybe start a new game and a higher difficullty 'may' increase the experience too. Not sure.

Yeah I'll have to try this... Does starting another game (game+ or whatever) using a completed ME2 import keep you at the same level or shoot you back down to 1? And also, does importing the ME2 character end up overwriting the original ME2 save?

I'll try to give the complete information here, therefore answering several of your questions:
After you completed Mass Effect once, all of your characters get +25% xp when you start a new game. Additionally, the get 200 000 credits and 50 000 of every type of ressource. You can also choose a bonus power depending on the crew members which were loyal to you.
This is what you get when you start a new character.
When you import a character from Mass Effect 2, you get what I mentioned above and you can keep your level. If this character was imported from Mass Effect 1 before that, your Mass Effect 1 decisions stay. Your weapons and armor will stay, you lose all other upgrades.
If you import a character from Mass Effect 1 after you finished Mass Effect 2, you also get the extra ressources, xp and money I mentioned above. For example, I started with a whooping 330 000 credits. You can also import the same character you finished ME 2 with again.
Given the +25% xp bonus, it's actually the best decision to import the same character again, because you'll reach level 30 nonetheless, have a bonus on paragon/renegade points and extra cash.
The only real reason to import a character from Mass Effect 2 is the fact that you can choose a second weapon or weapon training at a certain point in the game (I want to stay spoiler free here, but I think everyone knows what I'm talking about). I can't confirm this but it seems logical.
