Not everyone is bisexual, that's true.
Thane, Garrus, and Jacob are all heterosexual men and the option to romance them as a male Shepard is not there. Tali, Jack, and Miranda are all heterosexual women and the option to romance them as a female Shepard is similarly not there. Granted, Kaidan and Ashley were initially intended to go both ways, but even that was nixed. Heterosexuality is pretty well represented in the game. There isn't even a homosexual only option, which would be neat to see.
Pretty much everyone except for the asari are straight, and that's presumably only because they 'have no gender' despite being female, lol.
Chances are if Joker is implemented as a LI like we want, he would be for female Shepards only.
What you have to remember is that there will be gay people who play the game, there will be straight, there will be swing-any-which-way, and there will be people who play Mass Effect strictly for the shooting. Any good developer will do what they can to make sure everyone has a little su'in su'in, you get what I'm saying?
Call me a hippie born in the 80s, because I believe in love without genders and I'd love to see that reflected in a game. Just sayin'!

ALSO. The option to initiate a romance with almost all of the characters is actually more realistic than not.
IRL, almost everyone IS an option, if you know how to get their interest.
