With the various medical conditions some of the squad have, you'd think they'd have given Chakwas more dialog concerning them mid-game. I keep running back in there to talk about Grunt or Thane or whatnot, and it's just the same post-drink "background info you already asked about" dialog.
I think she has words with you if she has to watch the Normandy's crew die later in the game, but I don't plan on doing that to her.

She does, but thats at the moment... Though I finished all the side missions and what not, so I chose to restart the game, so don't know if she has anything new to say. But still, it's sad how little interaction you have with her.

My Shep wouldn't have done anything during their drinking session (I played a Paragon staying faithful to Liara), but I wouldn't have minded an optional action to get her a blanket out of the supply closet and/or reposition her once she passes out across the hospital bed. She looked terribly uncomfortable like that, and having a horrific crick in your neck on top of a hangover would just be cruel and unusual...

she did say backing in ME1 about how she wanted to serve on an alliance vessel and tend to the wounds of soldiers with their cold stares, and something of something something...
so basically what I'm saying is that it kinda makes sense...
age shouldn't be that big of a deal.
(you could make a sheperd that looks old couldn't you?)
