Navigate to your Movies folder, found in: %/Program Files/Mass Effect 2/Biogame/Movies. The following .bik files can be renamed to .bak to stop them running:
ME2_Opening_SunMid_INT
Opening_End_Seq
Opening_End_SeqFM
Opening_Seq_INT
ProNor_Pod2
ProNor_Shepard_Rebuilt
ProNor_Escape
ProNorEscapeAsh
ProNorEscapeKaid
This seems to cut out most of it, however there are still some sequences which can't be skipped, such as Miranda talking to the Illusive Man; the scene between Shepard and the "love interest" from the first game and rescuing Joker.
Also if you import a character, the appearance seems to default and doesn't
carry over. However you can of course just recreate the face using the customise options. You still recieve all your bonus goodies for importing a character as usual.
So other than the appearance not carrying over I've not noticed any other problems with this. It cuts down starting a new character to around 2 minutes instead of 10. If you ever want to get the movies back, you simply change the file extension back to .bik instead of .bak.
