As a long-time resident of Earth, I would sacrifice it for the Citadel. The Citadel is just so much more interesting, and Earth is ugly and boring and stupid. The sooner I get off this planet, the better.

Where does it say that it connects all other relays together?
Either way I would save The Citadel

In ME1 Vigil explains that the Reapers use the Citadel to shut down all the other mass relays, thus isolating all the planets around that mass relay. They then travel to them one by one and wipe them out, with no organised response possible.
Presumably that means that the Citadel also allows for the selective activating of mass relays, so that the Reapers could turn on the one they were going to visit, fly through and wipe out the people around that mass relay, and then jump back to the Citadel to repeat.

Why haven't we been able to vist Earth yet on a quest? Sure, zipping around saving the galaxy is awesome. But you'd think we'd at least be able to poke around future Earth for a while. It'd be interesting to see.

I for one kind of want Earth to be destroyed. Then we become Nomadic spacefarers like the quarians, but no one messes with us and we become the stuff of legend. That one race that saved all of their alien asses when they didn't even believe in our warnings.

They'd be dead.
The Citadel isn't a homeworld.
It's LITERALLY 11 BILLION human lives, or 11 MILLION of every Citadel species INCLUDING humans.
Logical choice is Earth.

By the species Earth.
By the surprise the Citadel.
Which one would the Reapers expect to be defended. Catch them off guard.

After the B.S in ME2 and ME1... I can't say I'd care. And I've been paragon up until the end of ME2.
I imagine it'd play out that the Reapers need the Citadel to do their grand scheme thing, so they attack it with a bunch of Reaper ships.
The Citadel fleet + Alliance are defending it and finally realize it's a fake-out and that they're really after Earth for more Reaper-babies.
So while the they're wrapping up with the diversion, Admiral Hackett, or whoever is in command of the fleet at Arcturus station are getting whooped in the space above Earth, in an epic Sci-fi space battle scene.
Suddenly the main Alliance fleet from the Citadel jumps in, with the rest of their allies. (Maybe not the Council) but the rachni, geth, krogan and quarians.
Then they either win by Shepard activating some magic-win-game-device or they legitimately win a battle against hundreds of thousands of super ships. I'm guessing the former.
I think the paragon choice would be to send the most of the S.A to the Citadel, but you get more Earth casualties, or possibly lose Earth altogether to a Reaper-Deathstar, and the Renegade choice would be to keep the entire S.A and all alies EXCEPT the Council fleets at Earth. But you lose the Citadel, and get less Earth casualties and keep Earth.

However, if destroying the Citadel wouldn't harm the mass relay network then obviously it should go. There are more lives on Earth to save than the Citadel, and if the Reapers do gain control of it then we are basically back to the situation illustrated above, only now the Reapers can likely still use the relays to move around much more quickly while still cutting off all other societies anyway.

Actually the Codex states Earth is "entering a new golden age. The resource wealth of a dozen settled colonies and a hundred industrial outposts flows back to Earth, fueling great works of industry, commerce, and art."RequiemValorum wrote...
I might be tempted to lose earth.
In ME earth is pretty much a backwater of civilization, still with much intra-national in fighting and areas that are still at 20th century levels of life.
It is not even home to the Systems Alliance.
It is also named "The homeworld and capital of humanity", which sounds hardly like the backwater.

Also, with the Citadel destroyed, the galaxy would perhaps finally move on from that obviously flawed system of having the Citadel being in charge of everything. A galactic government can never work, the galaxy is too large. (in fact, you can easily say the same thing for a government in charge of an entire planet.)

Earth wins.

But personally I'd like to be able to take over the galaxy and install an Imperium of Man or Terran Empire with Shepard as Emperor.
Oh well.

Terran Confederacy, you mean.
Which suck in comparison to an Imperium of Man.
We should start calling the Terminus Systems "Segmentum Obscuris"
