I'd love to see the Citadel brought back to it's former glory, as well as maybe Noveria and Feros again.  With a few sidequests on each.  I'd love to visit Port Hanshan again and rub it in their faces about how I survived an impossible mission.  Seeing Zhu's Hope again would rock too.  If anything, I just miss the Citadel.
