Alright let me just clear up my idea haha. It would have been an option in the beginning of the game after you started flirting with Miranda. Maybe after her loyalty mission you could share a hug, or something when you get back on the ship. Maybe even holding hands in the elevator if you had her talk to her sister.
I'm not sure that their relationship had even reached that point. I mean, the next conversation after her loyalty mission she opens up with "I don't know if this is stress.." etc.. but I do see your idea.

Shortly after showing the Normandy speeding away from the base it could show Shepard on the floor, out of breath, maybe leaning on Miranda or with his head on her lap. One of them could say something to the other. Or maybe it'd be better if they didn't say anything and just sort of looked at each other like "we made it". I like this, too. Or at some point during the suicide mission. Something to recognize the importance of your LI, without gaming things to get this scene:

I don't know. Something like that. I'm sure my wording sounds really cheesy, but if done right I think it could be a good scene.

Really? IIRC, I didn't get the "I don't know if this is stress" talk after her loyalty mission. Isn't the first talk after hey loyalty mission basically debriefing the loyalty mission?
(Is there a good youtube compiliation of the Miranda romance?)

See this is what I was trying to get at haha. I knew I wasn't a complete idiot. Though being somewhat sleep deprived can really mess with your train of thought haha.

I could see this. I like the elevator moment a lot. It's ME1 fanservice, it's also a good character moment for Miranda--a high-performing, 'perfect' individual doesn't fail very often, and so when she makes a mistake, she doesn't handle it very well.
I think that was the point in the game where I started THINKING about MAYBE leaving Ashley.

I actually was expecting something like that to happen at the end,I was pretty dissapointed when it never happened.

I was sorta on the fence about Miranda at the moment, and couldn't see Captain America Shepard not pressing her a little bit on it. I've learned in Bioware games it sometimes pays off to pressure characters a little bit AFTER you've build a relationship with them. (And I was like, I just did her loyalty mission, this would be the time.) In DAO, for example, you can significanly change Leliana or Alistair's personality. In ME1 you can change Garrus pretty easily.
I have to admit, it's been more fun bringing a roleplaying mindset to these games (which are, after all, roleplaying games).

Didn't happen in ME1, either. But frankly, both ME1 and ME2 have kinda weak ending-endings, because they're not really the end of the story.

True... but at least there was a conversation (albeit a brief one) afterwards in ME1, I would have liked even that. In my opinion it would've added a lot to their relationship.
EDIT: Don't even get me started on Morrigan...I've never actually had to buy someone's affection until it came time to get the achievement for having romanced her, everything I did upset her. Such is the life of a goody-two shoes. <_<
