Sniper Rifle is incredibly useful!

I'd take the Sniper between those two choices. Although the AR is more versatile(even if you have the SMG).

Depends on the difficulty.
On low difficulty levels, you can go Rambo on their ass and use the shotgun pretty effectively thanks to Tech Armor.
On higher difficulty levels, the only class thats actually effective with it is the Vanguard.
Personally, i'd go with AR, but thats not one of your choices.

Shotguns are trash unless you get the Krogan Shottie (which you can't). Go with the sniper rifles.

An accuratised Geth pulse rifle or Vindicator will work damn well in any sittuation on any enemy.
All my sentinels took them . Second choice would be sniper rifles but personally i found them to be less useful that having a Vindicator or Geth gun on my back

Shotguns are a no no, absolutely no range whatsoever on top of very little ammunition. Sniper rifles cover the sentinel's core weakness, long range combat.

Shotguns can be fun on lower difficulties, because you can charge around up close to enemies using Tech Armor's explosion as well as Throw and/or Cryo Freeze to incapacitate stuff while you shoot it point blank.
On higher difficulties, this becomes a very bad strategy. Thus, I would go with a Assault Rifles. My reason for this is that, personally, I find shields to be the hardest defense to get down. I think this is because your allies are more geared towards taking down armor than shields. Tali, Legion, and Morinth are the only NPCs without a power geared towards taking down armor (and most people go with Samara instead of Morinth anyways). On the other hand, Garrus, Miranda, Tali, and Zaeed are the only NPCs that DO have a power geared towards taking down shields. Thus, unless your party is going to involve 2 of those 4, your squad will strip off armor far better than shields. This leaves your biggest problem to be shields because Overload won't quite cut it by itself. Assault rifles deal with shields a lot better than sniper rifles do. However, if you like sniping, you certainly won't be gimping yourself by using a sniper with a Sentinel.

SMG can deal with shields as well as an AR, as long as you aren't at long range.

Yeah but SMGs are quite lame at a distance, and you aren't always close to something you are trying to kill.

I got AR because it is easy to use at any range and provides reliable damage.

I would choose between AR and Sniper.. Personally went with sniper rifle because I found a solution against scions, who were a pain in the ass when I first started playing.
And since we have SMGs which blow up shields/barriers, aren't shotguns only good against shields/barriers and crappy against armor? Basically getting the same output being a close range weapon and strong against shields/barriers. But to me, it's really preference. I'll probably pick up a shotgun for fun on my sentinel somewhere down the road after this playthrough on insanity.

I took a sniper because I needed some long range options

I went with AR on my sentinel, since I already done sniper rifle with soldier and will do sniper again with my current infiltrator playthrough. AR is very useful, but a bit redundant with SMG. The best thing about sniper rifle is that you can also do long range power attack with it. sniper zoom in an enemy at long range, use overload, warp or any other squad skill via quick keys. i'm having a lot of fun with my infiltrator doing this, cloak, aim, use miranda's overload and some other skill, take a shot.

I'm in the Sniper Rifle camp. The SMG is a fine up close weapon, so you just need to cover distance attacks... sniper rifle handles that just dandy. (so add some Warp ammo and suddenly mr. non-combat class is now making vanguards cry).
