Some do. Wrex for one. Experience and the time to digest its lessons can change a person. In ME1 Wrex sums it up quite nicely when he states that in his youth he was eager to chase after every fight, now that he is older he is content to sit back and wait because the best fights will find him.
Wrex was an exception to the rule and his role in ME2 shows this. Grunt, while proficient in a fight, is nothing but a roided up Krogan adolescent born in a jar. Wrex is ruling Tuchanka with a wit and guile unheard of within his species, but when he goes then it'll all go to the dogs again.
Wrex is not alone though. Consider the Shaman on Tuchanka (sp?). Another grizzled veteran whom time has blessed with wisdom while not removing the inherent willingness of Krogan battle prowess. Tying this to a previous post, Mordin has a point when he compares the uplifting of the Krogan by the Salarians as giving "atomic weapons to a caveman". The Krogan are indisputably aggressive by nature yet they are also in possession of intelligence and emotions other than battle rage. Given more time to develop they may reach a more balanced state.....Another example: Listen in to one of the adult Krogans standing at a table with a friend near the merchant on Tuchanka; he reveals a very tender side discussing his son and what he should do about it.
While it's not the same exact situation, I think there are some real life parallels to our own history. Take my ancestors for example: The Vikings. Fearsome warriors that terrorized the entire coastline of Western Europe, conquered all of Britain except for the kingdom of Wessex, sailed to Iceland, Greenland and North America. Sailed up the rivers in to Russia and Eastern Europe. Today we are amongst some of the most pacifistic people on Earth who design furniture, produce bacon and windmills (thanks Christianity

). It isn't inconceivable that the Krogan could evolve in a similar manner over time.
