It's not viruses that are the problem. In ME2 its explained that there are no insect on the Quarian homeworld so the animals on the planet formed the sort of symbiosis that insects/plants have on earth in order fertilize plants. Essentially Quarians are pollen carriers. When a human comes in contact w/ pollen the natural body response is to expel it, like sneezing. The Quarians don't thier bodies adapt to its presence and work around it.
When Quarians get "sick" their not actually sick from a virus or desease but from an allergy. Stricktly speaking their immune system isnt "weak" but it over reacts foriegn contaminets. Since they lived in sterile space ships thier bodies became accustomed to no contaminants, and thus their system is workin like a blank slate. When a new contaminent is detected the body throws up all its defenses until it can figure out how to handle it. Thats what makes them "sick". If they body were exposed to high levels of multiple contaminants at once the immuse system would go haywire trying to stop everthting and could lead serious injury or death (in humans we call this anaphalactic shock). And thats where the danger of new environments is from. Essentially its too much at once.
Strictly speaking Tali (or any Quarian) could adapt to a new invironment (like the Normandy) in time and w/ the proper gradient. And Tali should definately be able to adapt to Sheppard Presence. But she would still need a suit to leaving the ship.
