Yes, there's the poll, but there are spammers and haters always ruining polls (works for all things Mass Effect). I think forums are a much better example what people really what in ME3. There's this Tali thread, there's the Joker thread, and many other threads too that are popular and with good reason.

I'm not convinced. There should be little doubt where my feelings and loyalties lie regarding Tali, yet it is hard not to acknowledge truthfully that a majority of posts in our two epically sized pro-Tali threads are made by many of the same people - myself included. Devout fans or believers of any cause - whether it be political or as is the case here, in favour of Tali returning in ME3 as a recruitable love interest (who needs to have a face reveal!) - tend to be some of the most vocal and because of this are able to create the impression that they represent the majority. This need not be the case; it is not uncommon for a vocal minority to be just that: A minority. Still, the possibility does exist that a vocal group manages to tap in to a much deeper ground reservoir of public sentiment.
In layman's terms: Short of putting everyone with a passing interest, or more, through an extensive psychologically balanced survey there will remain a lot of guess work as to what the fans truly want. Perhaps picking up on reoccuring requests and expressed desires by fans over an extended period of time may be one of the more practical ways to measure the fan waters' temperature. An ironic example would be the case of the Mako in ME1; lots of complaints about poor handling and frustrating planet-side drives, then when BioWare listens to its fans and getst rid of the Mako to replace it with planet scanning people are coming back complaining that they now miss the Mako.
