I was ticked off when Liara gave me the cold shoulder in ME2. I went on and romanced Tali in that playthrough. I swear that if Liara tells me off in ME3, I'll tell her to **** off and kick her off the Normandy. How do you like me now?!?!

I'm looking forward to hopefully seeing how a Liara vs Tali confrontation would go. Liara seems to be a bit ruthless now, and Tali doesn't back down when she's pissed off. And both really care for Shepard whether they are romanced or not, though it's easy to miss that bit with Liara in ME2.

They should make it an option to say either that, or just something along the lines of "I want to."

So, if you went with "I don't want anyone else; I want you." then you couldn't just cold-heartedly dump her later for Jack or Miranda.
