Because the start of the game should feel hard and hopeless. Not that Tali/Shepard isn’t there, but there should be a problem. She is missing, hurt, in the middle of a warzone, something is wrong, etc.

Jumping back though, I've always had this weird...I guess "Fetish" (that sounds horrible, I know) of hearing Tali call Shepard something akin to, "My Love," but in the Quarian tongue. Sometimes the Omni-Tool Universal translators don't work completely, like when Tali called the Starboard Core Drive a "Bosh'tet." We know it pretty much means, "Bastard," but the Translator sometimes doesn't reach that conclusion. Anyway, I think it would be pretty damn Romantic...and kind of Hot.

Agreed.
Because the start of the game should feel hard and hopeless. Not that Tali/Shepard isn’t there, but there should be a problem. She is missing, hurt, in the middle of a warzone, something is wrong, etc.
You almost need that to create good suspense and drama. There always needs to be a problem that can be solved for a good ending. Just like Tali's suit and immune system present problems that are hard to solve, but ultimately make the relationship more meaningful.

I have to say, I'm getting a little tired of "protagonist dies" game endings. Those are okay for non-interactive media, I think, but in general I'm a little more invested in a character I actual control.
