NO ME2 SPOILERS
I never played as a fem shep even though I got 1200/1200 achievemenst played through 3 times. I'm considering it for ME2, did I miss anything in ME1 much from only playing a male?
Without spoilers, will I miss much in ME2 if I only play a male?
What female/male specific elements were in ME1?

as far as I remember the only difference is the love interest choice, males get Ashley or Liara while females get Kaiden or Liara
there are a few more variables in ME2 though so I would recomend having at least one character of each gender to import if you're a completionist

I may be biased but I think Jennifer Hale makes femshep the best protagonist by far. Im not even considering doing a maleshep for ME2 for at least another 2 play through.
In terms of gameplay difference there isn't any apart from the love interests. However the voice over of course make it a very unique experience. One which may change your mind about maleshep. My first playthrough was male and I have never done it again. Must say something right?

Some characters will have different dialogue, or react differently to you, based on gender. Harkin, for example, has an almost completely different dialogue with a female Shepard.
It's worth experiencing for the subtle changes alone.

Agreed. My definitive Shepard is female. I can't even get past Eden Prime with a Male. The voice acting is just... ugh.

Aside from the love interests, the only real differences I've noticed in ME1 based on gender is Harkin's dialogue with you in Chora's Den, a few minor lines when talking to Conrad, and the Negotiator quest with Lord Darius (which you only get with 80% or higher Renegade).
