Well many of us have alot of Shepards, so how have you dev yours? While I love my main Shepard (Joshua Shepard because hes based on me) I think my fav Shepard to play is Fiona Lee Shepard.
She is a earthborn so she is gritty and she was a sole survior which made her bitter as hell. She does not care for life and will do what ever it takes, however underneth all that anger and hatred is a woman who is sacred. You could say shes like Jack in terms of her personality. She never opens up and loves sex, only a few people have witnessed her soft side and it was not long.
So what are your Shepards like?
So lets talk about your Shepards...

My canon Shepard is Hasani, also an Earthborn Sole Survivor, but his demeanor is completely different than Fioana's. He's tough and ruthless with enemies and criminals, but (usually) kind and very "open door policied" with his crew/friends. He joined the 10th Street Reds strictly out of necessity and hated every minute he was with them; joining the Alliance Marines was one of the happiest moments in his life. Because he grew up alone, the army became his family, so he took the loss of his troops on Akuze pretty hard. He's learned to cope with it, but the experience has made him work extra hard in preserving the lives of those who serve under him.
He managed to save all his crew and companions at the Collector Base, and is quite proud of that fact. Hasani more often than not befriends his crew, but knows when to put business first - especially when there are lives on the line. He approaches romantic relationships cautiously, and hasn't had sex outside of a serious relationship since his early years in the Alliance. Hasani fell in love with Ashley during ME1 and remained loyal to her throughout ME2, even after Horizon.
There's other details, but I've rambled enough for now.

I have two mains that I play. Have to have 1 Maleshep, 1 Femshep. Male is Book Shepard. It's an obvious Firefly reference... I just couldn't help it. He's a cowboy. Female is Nawel Shepard. Was Adept in ME1, now a Vanguard in ME2, although I have another save with her as an Adept.

My main shepard is a female earth born gang member, hero of skylian blitz Adept. Named her Liahna Shepard. I play the paragon route but have been known to take bold moves from time to time. (HA! Take that Elnora! Cathca!)
My second shepard is male spacer survivor of Akuze, Engineer. Marc Shepard. Lots of fun with him too. He's a bit more ethical than Liahna, but then again, he was never in a gang.
Was able to do Insanity with Liahna but didn't bother with insanity, after earning the achievement, for Marc.
I played both genders to see how the romances play out.

Makoto (Japanese kanji for sincerity, and one of my favorite anime villains, Shishio from Kenshin) Shepard is a Kung Fu monk looking infiltrator, war hero, earthborn, and mostly paragade in a 1:2 R:P ratio.
He's very self sacrificial, but doesn't mind a few private vices. The Miranda romance was satisfying.

Standard FemShep Jane. Always maxes Paragon but with some renegade - usually 10-15%. I just can't do the MaleShep thing - two reasons: (i) FemShep voicing is so much better; (ii) if I'm going to be looking at the same character for 30+ hours, I prefer to look at a female. Wow - call me weird. But then I can't romance much - ie no males. Also weird - these are mere binary computer codes after all - everything comes down to a mass of 101010011 etc. I did prefer my DAO choices - more ambiguity. In ME and ME2 it's all pretty obvious. Infiltrator both in ME and ME2 - just love those sniper rifles! Earth born loner origin thing. Gee - some sort of pattern here? Also very into saving everyone, and having everyone loyal. I just wanna be lurved - waahhhhh! Peace-loving - but I just love the feel of a good head shot through the scopes in the morning... afternoon... evening... etc. And don't even get me started that I can head shoot someone and watch their brains fly, but can't see or touch a naked anything, let alone have consensual unadulterated anything. Now that is sick.

I have 2 main Sheps from ME1 imports:
Darius Shepard: Earthborn/War Hero. Mostly paragon Commando/Soldier. He has a really chilled out demeanor (someone who you could drink with), has a drinking problem, jokes around a lot, loves clubbin, and is a womanizer. He knows the difference between good and evil when he sees it, but his earthborn past tends to make him go corrupt in certain situations. He can be cocky at times while knowing when to show enemies mercy, and furious toward his enemies other times. I really like all the choices that can be made in ME2, really gives me a chance to flesh this character out more. He's my most realistic character.
Marcus Shepard: Colonist/Ruthless. Mostly renegade Nemesis/Adept (formerly vanguard in ME1). The image of his family and friends being killed by Batarian slavers constantly haunts him even though he won't admit it. He is very emotional and rage-filled during missions, especially when colonies are involved. He is essentially an avenger. For each colony that gets attacked, he responds with merciless fury. He sees his crew as a second family whom he would protect with his life to compensate for the lost, but again won't openly admit to it. I thought that the connection between his rage, his sorrow and all of his hate would turn out an extremely powerful biotic... turns out I was right
I actually can't choose between which one I like better to be honest.

I've got two that I are my favorites
Mara Shepard grew up as a spacer kid, joined the Alliance almost by default with both her parents serving. Her infiltrator training saved her life on Akuze, but she couldn't save anyone else, a fact that haunts her still. In spite of her losses on Akuze Mara came out stronger and is now almost fanatically committed to her team and will always put her team before herself, swearing to never repeat the mistakes that saw her entire unit killed.
On missions she demands a high level of professionalism from her team and those she works with, and hates being led on with false or withheld intel more than anything else. Despite her hard nature in combat she makes it her business to know and befriend her team, as committed to them off he battlefield as on it.
Every member of her team survived what was said to be a "suicide mission" to destroy the Collector threat, a fact she is infinitely proud of, as she feels she's finally beaten Akuze and her mistakes there.
Jessica Shepard is a tough girl who grew up in the slums of earth, once she joined the Alliance her biotic traits were noticed and she was given full training as an 'adept'. She quickly proved worthy of the title as she was able to surpass other biotics who had been trained in "Brain Camp" since their youth.
Her immense biotic power and rough childhood left her with a rather short temper and a favor for heavy-handed tactics that caused countless deaths on both sides during the battle of Torfan, where she gained her infamous title that would define her career.
Despite her temper and renegade attitude she is not uncultured and is very interested the art and history of the various species populating the galaxy, this often puts her at odds with the numerous xenophobic attitudes of many humans and organizations.

Oddly enough, I only have one Shepard, for now anyway. Urania Shepard is a Vangard, colonist/sole survivor. By all rights she should be seriously f*cked up and maybe she is just a little bit. She's tough and has an ego, but tempers it w/ compassion. 100% Paragon w/ some renegade on the side, though she did kill the Cerberus scientist (Sole Survivor mission in ME1) in cold blood. She regrets it. Typically not her style. Understandably she doesn’t let people get too close, but fell for Liara T’Soni. Garrus is also her best friend. She remained faithful to Liara in ME2, but took to drinking a bit too much on the Collector mission. Although a solider first, she is politically savvy and loves to make speeches.
A bit of background on her background.
Urania initially escaped the Batarian raid of Mindoir using her biotic powers, but was recaptured. When the Aliance Marines finally broke through, she managed to escape again and was one of the few rescued by Lieutenant Zabaleta. It was only after the events unfolded that she learned the fate of her parents.
After Mindoir, She initially sought revenge on the Batarians and all other aliens in general. The hate almost broke her and it took several years for her to come to terms w/ Mindoir and understand that aliens, like humans are both good and bad.
With both Mindoir and Akuze, Urania learned one of the toughest lessons of war. Sometimes people die and there’s not a damn thing you can do about it. For what it’s worth, that only makes her fight harder.

I play as a Male Shepard every time. /Tried female Shep once in ME2 and I just could not listen to her voice.
Shep has default face because custom made are not even close, he is a War Hero and was born on Earth.
Commander John Shepard is Paragon most of the time, but can be ruthless when needed.
I have profiles for each class but Engineer, but Vanguard is by far the most fun to play imho.

Kit Shepard. Earthborn/War Hero, Adept.
Yup. She was in a gang. Yup, once she got out of that life she never looked back. Given her background, and her crimes, she'd never have been accepted if she wasn't an incredibly powerful biotic. She grew up wanting to be a hero but needing to be a criminal to survive and not be a victim, but now that she can be a hero she is. She does the right thing on the big decisions, but she's no one's patsy. Since she is some sort of dark-skinned mongrel (she doesn't know her ancestry, being an orphan) she was treated badly on earth. As a result she doesn't tolerate racism or xenophobia in the stars.
Her fondest wish, beyond defeating the Reapers, is to put a bullet right between Tim's eyes. She'll give him a chance to surrender, but she's really hoping he'll resist arrest.
And Liara's her girl, though she's worried about the path Liara is taking. She's seen too many people go down the path of vengeance and destroy what was best about themselves.

I have 5 characters.
1st - John Shepard | Male | Soldier | Earthborn - Sole Survivor | Play on Normal trough Insanity - 1 of each.
He is the default choice, default scénario. Mostly paragon but tends to the renegade option if they're someone dangerous. As in "Bring Down The Sky" with the terrorist for instance. Romanced Ashley, but saved Kaiden because he was with the Salarian Group on Virmire.
In ME2, he went with Miranda. 'nough said
Character wise: Good character and good replayability.
2nd - Allan Shepard | Male | Engineer | Spacer - War Hero. | Played on Hardcore and Insanity.
Face based on me (lol). Very paragonish if I can say. Always valued life and peace over anything else. On the speciality of this character is that he doesn't shoot his weapon often. He incapacitates his enemies and let his squadmates do the dirty work lol. In ME1, he romanced Liara, and in ME2 he remains with her.
Character wise: Boring personality, but good gameplay.
3rd - Dallian Shepard | Female | Vanguard | Colonist - Sole Survivor. (female) | Played on Normal.
Face based on my girlfriend. Mixed alignement but the most important decision are paragon (saved the council, Wrex alive, Rachni Queen freed). She obeyed a strict line of code (just like Samara) which means that if you are an "outlaw", she will be merciless to you. She had not love interest in Mass Effect 1 and 2.
Character wise: Good personnality but poor replayability.
Didn't play her on ME2 yet.
4th - HK Shepard | Male | Infiltrator | Colonist - Ruthless | played on Normal and Hardcore.
Here's my "easter egg" character. I tried to make him as funny as HK 47 from KOTOR Series. Treating humans like meatbags lol. As you can imagine, he was more renegade than paragon, but he wasn't xenophobic. For him, everybody is some kind of meetbag (except the asari who are fishbag lol). Wrex and Garrus were his buddy throughout the game. In ME2, Legion was his secret brother, and Thane was his model. Strangely, every teammates were alive in the end. xD
Character wise: Funny Character and awesome replayability xD.
5th - Random Shepard | Random class | Random Gender.
The 5th one is basically an "fill-the-spot" character which enables me to explore other option. Like fully Renegade, nobody survives, Conrad Verner screwed lol etc etc etc....

I have 3 main shepards who are all the same ME1 person.
Version 1. Sentinel Spacer/Sole Survivor, Renegade
Version 2. Infiltrator Spacer, Sole Survivor, Renegade
Version 3. Vanguard Spacer, Sole Survivor, Paragon (i play him like a paladin, i always feel like Vanguard = Paladin)
Edit: I think my first import for ME3 will be my next save of a Hardcore Vanguard who will be neutral.

My Shepard is Marilynn Shepard, also a earthborn sole survivor. She joined the Alliance miliary at a young age, wanting to get out of the slums that surrounded her. This is where she began to recieve training as an Infiltrator, because stealth is her forte. Through out this time, Marr kept trying to exceed her own expectations, trying to prove to herself that she worth something. These expectations were reached when she became a spectre, but it still troubled her in the back of her mind that the council only did this just to throw a bone to humanity.
All troubles she had about the council melted away when she met a Turian named Garrus, who also disliked the council for not seeing the truth about Saren.
Marr despises any criminal activity (killing looters for example). But around crewmates, shes very open and caring to what they have to say. Marr is quiet and complacent, always having a postive outlook on things.
