So, I know this question's probably floated around here before, but is there a good way to get more credits in ME2? What you get from the quests just isn't enough to get everything.

A good way? Nope. You can bet on urk fights for 500 credits a pop, and reload if you lose but that really isnt a quick method.
Beyond that, there is no other way to make money besides missions and those are finite.
If you beat the game once, you start off with a 200k credit bonus which is enough money to allow you to buy everything I believe. I could be wrong though.

Really? Guess it's all about buying what matters. It's not like I need the Hack or Bypass modules, or half the armor pieces.

The game was designed with limited credits available compared to merchandise to make upgrading your equipment part of the leveling up process. At the end of a mission you go up a level which gives you more points for powers, and you get more credits which allows you to upgrade your equipment.
Best thing I can suggest is that you scan planets at random: you'll uncover side missions once in a while that are usually worth 15k credits each if you hack everything.
