If Alistair is hardened, he'll still leave the team, but will grab the crown and become king instead of taking a ship and leaving the continent to get drunk somewhere else.

A hardened Alistair can be convinced to remain king even if Loghain is spared, but he will still leave your party.

Then apparently my game glitched and didn't harden Allistair. After his quest I told him he had to look out for himself and all that.

Did you do the second dialog where he tells you he's been thinking about what you told him, and you're right?

When you spared Loghain, the only option you had to keep Alistair from leaving is to marry him to Anora, otherwise, he'll still leave. By leaving, I mean leaving the game entirely. He will still leave the Grey Wardens to marry Anora, and only Loghain will be available to you on the party menu, but you can still talk to Alistair after the Landsmeet and post-coronation.

When does this come up? I've had many playthroughs where I tell him to look out for himself and he never mentions it again.

For me it came up both times in camp when I clicked on him. He actually starts the subject.
