Would be cool if your last action in the third game of the trilogy would be to order the crew to abandon ship, take the helm yourself and plunge the Normandy into a Reaper, sacrificing yourself to save others. At least, that would be the paragon thing to do. A renegade would demand that his crew go down with him or sacrifice someone else instead.
Come to think of it, kind of like the end of Dragon Age.

Retire to some distant world beyond the commotions of every day life, escape the politics and corruption that plagues the universe. Build a house and spend the rest of my days with my woman (Ash or Jack depending on which Shepard.)
Kingdom of Heaven style. Yeah, I'd like that ending.

Did they say that 3 was going to be the last mass effect or just the end of the shepard story?
Just the end of the Shepard story, the Mass Effect universe is worth too much to EA to abandon it.

Renegade : Shepard will rule the universe with an army of reapers at his side.

Head Reaper: "Killing me won't bring Shepard back!"
Spectre McSomething: "Aint that a shame." BLAM!
Then there's a sad funeral scene at the end where Shepard vows to protect Shepards widow and children. He was just 2 says away from retirement...

Renegade: You do something renegade and it backfires and kills you and your entire crew, but you kill "the Big Bad Guy" too.
Paragon: You sacrifice yourself to safe your crew and/or life as we know it
Undecided: Pretty much the same as renegade, but accidental instead of badass.

He'll be dead. There's no way he survives ME3.
Don't know...
I think the way Bioware is going, YOU will decide if Shepard lives or dies.
Although sacrificing himself to save the world (or to kick a reapers ass - renegade) would be a logical ending to the series.

So, my prediction is; sacrifice death, Revan-style disappearance, or hero-turned-villian for a future game. You heard it here first folks.

Whatever it is, I don't want Shepard to die. I'd like to see him grow old or something, perhaps something that involves one of the romances.
I second that... I hate tragic endings in fiction (games, movies, especially games, life already is full of tragedy) like "Fallout 3" (Bethesda even came up with DLC to remedy that)... for me personaly it has something to do with the attachemnt to the main character (it's like part of me dies)... with Shepard it would be even worse (after all those things he got trough)... just my 2 cents!

I would also be ok with second (bolded) conclusion... (but no death, Shepard cheated death once already).

A paragon character might decide on selfsacrifice because he thinks "Better me than anyone else, there have been enough losses already".
A renegade character might also decide on selfsacrifice, though, perhaps because he thinks "There is no other way" or "I want to make sure that everything is done the right way".

I wouldn't mind a graying, middle-aged Shepard returning as an NPC in a Captain Anderson role, however.
