I first played ME2 as Paragon Shepherd. And like you (before the EDIT) couldn't think of a good reason to obtain Jack's loyalty apart from the fact that I needed her to complete my team before entering the Omega 4 relay.
However, as evidenced by the 'influence' (LI or not LI) a Paragon Shepherd had on Jack (can't speak for Renegade) I like the fact that she has found a purpose and a structure in teaching others to defend themselves and seems to be thriving.
I really liked Jack in ME3. She had some great lines especially at the close of the excellent Grissom Academy mission - about to give Joker a mouthful and then is suddenly cut off.
It's one of the great strengths of the Mass Effect trilogy that I keep reminding myself of when faced with 'that ending'. Your choices matter. At least in ME1 and ME2 and up to the last 15 minutes of ME3 .
They matter. Self-delude yourself with ending-hate all you want, but the truth of the matter is that the Reaper crisis and everyone's personal drama were always separate plots within the story. How you handled Jack in ME2 should have no actual bearing on the Reaper war itself other than that she's fighting for you because of your friendship/romance.
If you didn't do any of the choices between ME1 and ME3, you wouldn't have the military force to even get to Earth, much less stop the Reapers.
And the Extended Cut's epilogue shows how everyone ended up, which varies based on your choices.
The vanilla really didn't need to show it because were already shown that everyone was gonna be all right when you finished their respective questlines. The personal plots reached their conclusion during the game, not at the end of it.
Not to mention that people hating ME3's ending, yet lauding Dragon Age Origins' ending is so hypocritical its silly. Dragon Age Origins' ending was nothing but a run of text slides containing information that amounted to rumors, not facts. Most of it got disproved in Awakening and DAII, which also disproved a lot of Awakening's ending slides. At least in Extended Cut's slides, you actually SEE the future to confirm it, and not just get a bunch of half-true hearsay.
