I was hoping to change to the stealth class mostly for defense (yay better than Barrier) but I couldn't seem to change from being a Vanguard when I imported.  I guess importing takes everything instead of just level/achievements/upgrades/etc?

If you import from ME1 then you can change class. If you import a ME2 character, you can't.
