What skills do you max out for each character and why?
I like to give Zaeed a maxed out base skill and maxed out Grenade as soon as I can. That along with Tali's maxed out shield drain is awesome.

On all Characters i try to max out their 'class' asap.
I use Zaeed on every mission, (except when doing thane/garrus loyalty, same place, saved a trip) and what i really did was go one in each of Conc and Disrupter shots, then Maxed out Merc, then maxed out grenades, and now maxing out Disrupter.
Basically Max out their class, then max out the ability you feel you need best for your dynamic.
If you're using the lameness of Tali you are a fan or need a tech, so max her class then droid then w/e.

I try to avoid putting points into abilities that don't really do much as you get to the higher ranks (concussive shot and hacking both come to mind) and max an ability early if it's complementary (and if they have an unimpressive bonus skill). For example, Thane gets his class talent and warp maxed early, because Shredder ammo is good but has limited usage compared to the others. For the ones that have excellent bonus talents, it's definitely hard to sit there with 5 or 6 points uninvested until you do the loyalty mission, but it's generally worth it when you can have Reave or AP ammo amped up right away.

Do you guys go for the "more damage/faster cooldowns" evolved version of class skills?
That's what I usually do.
