Not sure as I'm still messing with my first. But I would assume you just start a new game and you have the option to pick the same shepard? Correct me if I'm wrong I would be way off base here

You get the endgame save anyways, just start a new game and choose to import an ME2 character.

As was said, your NG+ save is there for when you want to Import ME2 Character, but BioWare has allowed players to continue playing after the final mission in order to catch any assignments that were missed or for when more DLC missions are released.

Every save that is made after finishing the final mission is considered an importable save.

I'm not sure. I'm guessing that the new game takes over your most recent save on your post Suicide Mission playthrough. I don't know if Bioware came out and said how it works, but it would make sense.
