I am considering getting one of them now, but I am not sure which one, or which system. KOTOR 1 or 2? PC or Xbox? Any help is appreciated!

I'd say play both, as I'm sure you can get them pretty cheap now. I played them on PC, not Xbox, so I'm obviously going to recommend PC version.
I had fun with both. My only gripe with KOTOR 2 is that it could have been so much more if they hadn't been rushed to release it by a specific date. If they had been given an extra 6 months or so, the game would have felt much more complete, and they wouldn't have cut so much content.
Edit: KOTOR 2 was still an enjoyable game despite the cut content. It was as good as the first game, but the endings were a little confusing and/or wonky, because they were rushed to get it out by a certain date. Also, the cut planet and incomplete romances because of time contraints make the game feel a bit incomplete. Blame Lucas Arts.

Which one had the better/more enjoyable/etc. story mode? Did one offer something that the other didn't? Which one is considered the better game?

Though, my preference for the second game may come from my love of Atton, who is so much more interesting then Carth. I hate Carth. I love Atton. Damn you Obsidian for not making a complete Atton romance.

In any case, KotOR tells the more traditional story. If you want an experience that reminds of the original trilogy in style and feel, and proper ending, KotOR is the best choice.
If you want a more unique and intriguing story with characters that are not as archetypal, get KotOR2. Ideally, you should just buy both and play them back to back. chiliztri hit the nail on the head as far as KotOR2 goes.

I agree with this. The story and characters are more interesting in KOTOR 2 but KOTOR 1 is more Star Wars-ish if that makes sense.Seagloom wrote...
Another vote for KotOR2. KotOR looks better. Well, brighter and prettier. It's like KotOR 2 was hit with a Stick of Drabness +1.

My laptop isn't very good gaming-wise...I have either 12MB8 or 256MB graphics card, 1.5GB of RAM, and an AMD64 processor Athelon x2 processor. Would the PC version run well with no-lag on this?

If you go to that website on your laptop and select KOTOR 1/2 from the drop down list, it'll tell you whether you meet the minimum or recommended requirements.
If your laptop doesn't meet the requirements, I'd say get the Xbox versions. Both games are on the backwards compatibility list.

On the subject of Kotor 2 and it's cut story though, from an earlier Kotor 2 thread:

Team Gizka never finished their mod. It was D.L. Stoney and crew who finished a restoration mod. You can find the mod here and a list of what's been restored here.
Some content has finally been restored. Might even have come on further, seems as these links are from three months ago. I keep meaning to give the mod a go, but first Dragon Age and then Mass Effect 2 stole me away. Nevertheless, one day I thoroughly intend upon seeing the fabled HK Droid factory!

Also the game isn't very demanding, even so if all your PC can do is 20-30 fps you're fine.(The game has very little action gameplay.)

Kotor was the one that Bioware made and Obsidian Entertainment made Kotor 2, so that is probably why the 2nd one falls a bit short on the storyline aspect, and specifically the ending. I own both games and both are well worth playing, and I think you can even download some higher resolution cutscenes for the 2nd game at the Lucas Arts site.
I have to disagree. If Obsidian wasn't pressured by Lucas Arts to get the game finished in time for the holiday season, I think the game could have been on par, if not better, then the first. A lot of things were missing and incomplete, and if they had an extra 6 months to finish the game, it would have been gold IMO.
That's just my opinion though, as I have a strong preference for the darker story and colorful characters from KOTOR 2. It really comes down to what your type of story preference is. As Seagloom said, if you like something more akeen to the original trilogy, KOTOR is probably what you prefer. KOTOR feels complete, while KOTOR 2 is rough around the edges. Despite it's obvious flaws, I still prefer KOTOR 2.
