As for the notion that they're all icky in their suits from sweat and what not, I think it's very safe to assume that said suits, being enviro-suits as they are, are quite capable of maintaining a comfortable body temperature. You could even take that concept a step or two farther, considering the level of technology we're dealing with here, and surmise that their suits are not only environmentally sealed and regulated, but also serve as a sort of "personal" maintenance tool, keeping their physical futures, relatively, unravaged.
On the subject of their immune system; It's stated, by Tali, that the Quarian immune system was somewhat lacking to begin with and almost entirely dependent on their environment.
I picture a pale or, at the very least, light-skinned race, with glowing eyes of course, and hair (what little they may or may not have) to match their flesh tone.
No matter what, I'm quite sure, Tali will be attractive. The personality alone is worth a tentacle or two probing your gums during a make-out session.

Quarians never had a strong immune system. Tali said that on their home planet, a lot of good virusses and good bacteria are presence. Some plants and animal species on their home planet are able to reproduce by "lifting" on other animals.
For example, a specific plant produces a virus with their reproduction cells inside of it. A Quarian will get the virus, but won't be harmed. Then the virus with the reproduction cells spreads and so the plant can reproduce.
I don't know where exactly Tali said this, but I'm pretty sure she talked about this somewhere.
PS: I'm pretty damn sure that if you would live your entire life in a suit, you wouldn't grow (much) hair. It doesn't have much to do with evolution, but the fact that the suit will hinder your body from growing (much) hair.

Either way im sure Bioware will make her attractive looking if they ever show her face. I also think its stange that only Humans have hair. No matter what they do with Tali, she is still
the greates character in this game.

And how exactly would a suit hinder growing hair? We are talking about hair and not some kind of plan that needs sunshine, fresh air and regular nutrition to flourish.
Most humans wear underpants for 99% of their time and it doesn't really do anything to stop our pubic hair from growing
I still think either they never had hair to begin with or are still having it. Losing their hair because of their suits doens't make much sense to me.

It's an in-game rumor, considering they built the geth and know a lot about AI, VI, and mechanics. Couple this with the fact that nobody knows what they look like, the other races made up rumors that they are cyborgs. It's mentioned briefly in the Codex.
