Andy, I think you may have seen him and not realised/twigged. He's certainly been in a lot of stuff.

Even if that would end the show, I know many watch it for Jeffster + Casey + Buy More, but the core of the show has been Chuck+Sarah, but keeping them apart works only for so long.
As I have said before they need to bring them together soon...they did a great job keeping them apart and keeping it interesting in Season 2...but if they do it too long then it will ruin the show.
It was scenes like this that made the relationship satisfying even though it did not get consumated:
But you cannot just keep doing those without resolution forever.
Yvonne is great again in that scene, your attention is on her and her reaction even though it is Zach who has the lines. The writers had the interesting choice of having Chuck say 'with the girl I love' and while Sarah is the girl he loves it simply does not make sense in that context...because logically if he does get the Intersect removed he would lose Sarah forever.

I've actually watched Chuck since day 1! Woo hoo! It's safe to say I was rather excited the first time I watched the Stars of ME2 trailer, Yvonne would have been enough alone but following it up with Baldwin? EPIC WIN!

Well that's the real trick isn't it. It reflects the conflict that part of the reason she loves him is because he has so much courage and does what needs to be done on their missions...but also she loves him because he is so real and innocent...so he has to remain both somehow.
But losing it would mean she would be sent away and he would never see her again. Hard to live happily ever after with somebody if they are not present.

Not sure if you've watched it or not, but in the end Sarah clearly had a voice in the matter. She just told Bryce that she wasn't coming. And Bryce took off. Chuck's choice caused this to fall to dust.

But i think it would be an interesting twist (for series longevity) if Sarah does leave the CIA (in some capacity) but both Sarah and Chck are sort of 'recruited' by Casey for the odd mission where their skills would be valuable?
Maybe way off the mark....dunno.....
