Actually Bethesda did that with Patrick Stewart in Oblivion.
In this case Bioware had big time actors who were legitimately stars in a video game.
They kinda did it to Liam Neeson in Fallout 3 also. Granted he was around more than Stewart was in Oblivion, but it was still a little disappointing.
