If you want to see how a character changes from from "good" to "bad", look for example at Anakin in Star Wars. It's also a trilogy - and the new trilogy has its flaws, more so than the old - but that part at least works. There, too, one of the visible reasons for his change was losing someone close to him. It was written and portrayed in a believable way. Yeah, more screen time was dedicated to the whole transition, but so what - as has been said, that's simply necessary if you want to have any chance of making it proper and believable. If you don't do that, better keep things the way they were.
Garrus is a good example for that. He's still the same guy, whatever we said in ME 1 doesn't matter (even though it was stored in the save game). And he has very little to say in ME 2. Apparently though his fans are happy, at least they still have their character in the game, and not trashed, and even got their little fan service romance on top. Is that what we wished for? Certainly not, but it'd have been better than what we have right now. Maybe it'll be made up for by a deep story and a beautiful continuation of the romance in a DLC or in ME 3, in that case in the end the disappointment with ME 2 would still be worth it. I doubt it though, nothing BioWare has done recently has increased my optimism on that part.
(Note: I'm not saying Liara is "dark side" now, it was just an example.)
