It´s not so much changing the main character, though there is plenty to worry there (I.e. in Gothic 4 it looks the previous hero will be the bad guy, and better don´t think what they do in comics and movies...) as the scope of the story: Shepard saved the galaxy, top that.
No need to. We've saved the world many times in games, and in the next one we do it again. So what?

Not so concerned about Paragon/Renegade endings, a couple centuries time skip can deal with that, or maybe the galaxy is in such a bad state at the end of ME3 it won´t matter the path (please don´t do that!)
Not going to happen, for the reason they want more games in the Mass Effect universe. What I rather fear is that they might force the "Shepard has to make the big sacrifice" ending on everyone. With all the obvious time constraints and lack of will to invest into the portrayal of different player choices, it could be very tempting: No different endings, no different epilogues, no canon issues. I would probably not buy the game for that reason alone, but of course most would.
