No it's not all the same. She talks to you a bit different. Not the words but how she speaks to you. She gives you smile or a look that she doesn't give you when you haven't romanced her.

Ash said that to me on my first playthrough, but she has never said it again. And I have been wondering what triggers that. The only thing that I did different on my first run was that I didn't pick up Liara first, but as far as I know the conversations with ash (and the other crewmates) are always done the same way (well, almost) :/.

Liara T'Soni.  Asari last names are probably mother/daughter line names.  If that is the case, then using anything else would be dishonest if not insulting.  It'd also explain why Matriarchs don't use them, as they've moved past the mother/daughter Maiden/Matron designations to become leaders of all their people.  Asari psedonyms are all just first names too that I can remember, that'd support there being a stigma against adopting an "untrue" last name.  So you can not use your real name and even use another, as long as you don't pretend you're the daughter of someone else.
Establishing a new line name might be acceptable for any daughters though depending on how that works.
