While this isn't described at all, I don't think it is necessarily safe to assume that she actually removes her suit entirely. The suits are designed to be modular, and it isn't far-fetched to imagine that the suits could have an inside "liner" that can be separated from the outside in case they need, or want, to change the look or functionality of the suit.Also. Suit change is probably because she passed her pilgrimage,a nd by her people is now considered a full woman.
Change suits in a clean room, stored them probably in pressurized sterile cases, and she probably chooses the fabric to wrap around her suit... But I think the actual suit may just be universal in design and making.

If I get what you're saying you mean the pieces we see that contain purple and the embroidered designs would be something they could remove and replace? That actually makes quite abit of sense.

Right I would think because of the Pilgramage, but we also see the possibility of her having more than one suit, which brings up another question, if she does return in Mass Effect 3, will we be seeing her the same way? I'd think the pressurized places would be one thing yes, but where would it be safest on the Normandy for her to change, how long would it take to change out of it? YOu'd think someone would be able to know what a Quarian (aside from our Shepards) looks like out of their suits because they'd have to be the one to design them, and i'm sure each of them would need to have one properly fitted.

It's a difficult question to address, because the real reason is almost certainly what you said: Bioware wanted to give her a more mature and unique look to emphasize both her growth and her importance as a character. She's the only Quarian with a unique exosuit (I believe all the others are just the same male or female model with color swaps), and that doesn't make a lot of sense from a "realistic" standpoint.
That said: Maybe she's just at the forefront of Quarian fashion?
