well we do know that they have 2 eyes that glow a humaniod nose and mouth and no ears. Also probably have hear of some sort as the codex states they are mammal analogs.

Theres not enough information in the codex or the book to get a real idea.. all it really says is they have skin, eyes, nose ears, 3 fingers 3 toes.
What color is their skin? What shape is their nose? What color of hair do they have if any? What color is their skin? eye? How deep are they set into the skull? how big is their mouth? what shape is it? what shape is their head? I can go on forever and never get an answer.

Incorrect. From observation in-game. Codex entries. And Mass Effect: Ascension. The following was pieced together:

Morphology:

Hair: Unknown. If exists, then short. (Long hair inconvenient in helmet)
Skin: Unknown. Presumed to be smooth from view of nose. Due to no exposure to elements. Likely hyper sensitive. Soft. Supple. Two theories regarding color.
  Pale Quarian Theory: Either shade of blue/purple or various pale shades. Based on observation of blue/purple nose shade. Tinting from visor affecting visible skin color.
  Dark Quarian Theory: Star of Rannoch older than Sol. May provide greater solar output. Solar output requires darker pigmentation.
Nose: Human in shape. Unknown number of nostrils.
Eyes: Accutely angled. Tear ducts present. "Glowing." Three possible theories.
