Because there is no human in the same galaxy with Tali as far as appeal to me. I love her personality, connection to my character, body, the way she acts. How her face looks is of little concern to me, I'm just stating that I expect it to be human-like. If it was more alien I wouldn't stop liking her.
What part of 6 toes, 6 fingers, digigrade legs, slanted glowing eyes, immune systems forcing you to live life in a suit is human? We tend to look at Tali as not very alien since we have grown used to her alien traits. They're still there, and a human like face won't make her any less of an alien.
And now I want a face that matches those traits. A human face is, well, human.
There's a difference between human and human like. Tali's face will still most likely be a different color, as well as have slanted eyes that may or may not glow. Her ears are different as well. A good part of her face is confirmed as not human. Filling in the blanks as humans results in a generally pleasing, but still alien face. When you try to make the whole thing alien, you tend to end up with polarizing faces that some like, and others hate.
