I think its because most tali lovers were actually Liara lovers (including me). But after seeing what was happening to her in ME2 ...I went with Tali.
Then I replayed ME1 and ignored her.
All Tali fans, read this! IT'S UP TO US TO KEEP TALI ALIVE! 3.0!!

little sunlight=pale skin
In humans it does, but it isn't a necessary mechanism.
Why would you think that Quarians have the same skin pigment as humans? After all, their planet has a different atmosphere and their Sun radiates in a different spectrum.
Humans lose skin pigment when there is no sun because having too much melanin causes vitamin D deficiency. There is pressure to not have too much skin color without sun.
However, it is perfectly plausible that Quarian skin pigments are not detrimental in low-sun conditions. In that case there is no evolutionary reason to lose the pigment, and they wouldn't get any lighter.

She drew me in with all that talk of her people, their culture, lives, etc. It was really quite intersting. And she had such a cute voice to explain it all with.

Well, for one, I found her physically the most attractive female. Yeah, couldn't see her face, she was in a suit, etc., but her body, just dayum!
Secondly, the voice. I really dug her eastern european accent.
Thirdly, I virtually always played as a soldier; usually all I'd switch up would be my weapon specializations. Thus, I needed a tech to hack things, and Tali filled that roll perfectly.
Fourthly, I really liked Tali's personality. She wasn't quite as well developed as I would've liked, but she just came off as a very cute, kind, and humble person. She thanked for not treating her poorly.
