You assume that Quarians have the same marriage rituals as humans. For all we know, they might not have weddings at all, or their weddings are entirely different than ours. Proof ? Salarians have no weddings, they're just signing breeding contracts. Krogan just go to female camps and... breed >.>. No data on Turians or the Asari, but as for Asari, I believe Liara said in ME1 that it is more than socially acceptable in their culture to simply "be" with someone, with no "permanent" vows/promises.
As we know nothing about Quarians, the possibilities for their weddings are endless. If we wan't to speculate, we must open our minds and stop thinking in human terms.
Which is damn difficult at times, since we've never seen anything truly alien.

Still - we all got used to the idea of a veil/dress, because we see it on every wedding.

As much as I love Ghost's drawings, which are damn good, if I saw Shepard and Tali taking a quarian marriage, and seen that more than 50% of it is an analogue of a human wedding, I'd be at the very least not amused.

I'd imagine any ritual would be simple and cheap. The guidance of the ancestors would likely be invoked. Given the focus on pooling resources, it might be more about leaving one clan and joining another than about joining two people together. Then again, the specificity on nuclear family housing makes me wonder just how important clan is (because clan dorms would be more efficient).
Edit: I wouldn't mind it looking 50% like a human wedding because... well... 50% of the couple in question is human? Why not celebrate a little of the tradition Shep is bringing to the
