Actually they all speak one univesal language this was stated in revelation? i believe. 

Translator programs. It comes up in the Bring Down The Sky DLC for ME1.

If it's "Trade Pigdin", it's not a language, just a system of words traders recognize. Like symbols and such. For speaking, everybody has translators.
