How the hell do you charm/intimidate then?

As a Paragade you can't! Which means Tali/Legion and Jack/Miranda die!

No... my last paragon (the one I'm New Game +'sing on hardcore right now) had everyone survive, except ship mates because I waited

I agree as well.  I actually find it annoying when people argue about paragon vs renegade as if you have to go all out one way or another.  Both extremes are terrible in their own ways.

My characters are paragons... with a hint of renegade!

I do find that the game makes it way too easy to get paragon points. 

Tali, one of your closest friends, comes to you because she's worried about getting exiled from the people who she's put her entire life's effort into helping.  She's upset and confused why.  You aren't a complete ass, +5 paragon!  Huh?

That isn't true at all.  I always play very neutral, and I've never lost the loyalty of any of my squad members.

By staying consistent in choosing paragon or renegade in decisions that don't change.  That and choose the +100% persuasion specialization class.  You will easily have enough to resolve all situations, except for possibly resisting Morinth.

If all else fails just use the glitch at the beginning of the game.

I went full Rene and romanced Jack  (Didn't know you could do Tali) and was only unable to do the Morinth C/I and the Taligion C/I. My guy was badass though. glowing red eyes ftw. (Shoulda made Para similar but with white or blue eyes)

Like my sig says, in ME3 I want your morality choices to affect squadies. (Super Renegade makes everyone badass and dark-looking Super Para makes them nice and heroic.)

I would probably put Tali at 75/25 paragon/renegade.  You really can't ignore the fact that the majority of the opinions she expresses in the game are renegade opinions towards the geth.  She's nice to people who deserve kindness, but so does my renegade Shepard.

As for the others, Jacob is mostly paragon.  The others, Thane, Samara and Miranda, all seem pretty neutral.  Thane and Samara seem nice and all, but hard to get past the ruthless murder as a proffession thing.
