It's basically Tali's "pick me or her" dialog. Don't worry, it's not angry or sad or anything, it's actually pretty sweet. "This means something to me... it means a lot"

I concur. They have feelings for each other--thus, sex. A shallow relationship would have lacked all the feeling... plus you can cuddle with her etc. afterward. That's a clue that it wasn't just a one-night fling

Indeed, and this is nothing against Jack, but the rengade sex scene with Jack in her bunk was shallow, and I don't think anyone would argue that. There was no real emotion, just lust. Where as with Tali, it was entirely spurned on by shared emotion.

Yeah, in ragards to Jack, even Kelly mentions that just going down and excepting Jack's first offer of Sex would be an empty thing and would frankly make Jack not respect Shepard at all.

they were both (Tali and Shep) a bit afraid they would die in the suicide mission. I imagine that's the reason for the quick progression of the relationship. the Ability to cuddle in bed and talk with her on the couch with her in her suit lets us see that the relationship is deeper than just intimacy out of mortal fear.

Tali, and potentially Shepard, could also have been building their feelings for eachother since the first game. So their relationships are comparatively less abrupt than some of the new squadmates introduced in ME2 if you add everything together. Garrus has the same benefit.
