I said in my quote (if you'd like to look up at it) that it was present in a few other ships you were aboard. Not a few other ships from ME1. Dr. Hart's ship was simply an example that happened to be from ME1.
But beyond that, the codex entry lists the Flotilla as only containing "some" ships from 300 years ago. Which would mean at the very most, less than half. So it's entirely possible that they have more modern ships than you are accounting for.
I know, my point before was that Dr. hart's ship and other freighters in ME1 were all the same... And the citadel, and it's fleet are top of the line, so they'd of course have the top tech.
And having only "some" ships from 300 years ago mean that the rest could range from brand new to 250 years old, hard to tell exactly. Either way it's unlikely every ship would have the latest interface technologies.

By the same token, Haptic is not claimed to be the latest interface technology. It is simply listed as being an advancement in computing. It is entirely possible it has been around long enough to have been present in some of the top of the line Quarian ships when they left Rannoch, and to have been on the ships they scavenged.
I listed Purgatory specifically because of the point about ME1. It is a freighter (or was originally), and was seemingly not designed by the same people that build the freighters from ME1.

It's as possible to have been a round that long, just as much as it's possible that it wasn't...
And purgatory has been re-purposed, I assume that some of the tech and layout may very well have been changed as well int he re-purposing.

But it was repurposed by a group that was not a company nor a specific race, lending credence to it not being specific to a company.

Blue Suns are very much a company, maybe they don't manufacture anything; but that doesn't make them very less of one. And all companies use things that they don't make, whether it be buying furniture, tech, etc etc.... It's very likely that if the systems were not up to date when they got Purgatory, that they'd get them so the ship would be more secure and run smoother.

So you would concede that this haptic interface is a standard amongst companies, then?

Companies that have the finances and access to purchase it? Of course, but I very much doubt everyone uses it.

If a technology is common enough for it to become a matter of pride to get implants in one's fingertips, than it is an easily accessible and cheap technology. It's present in Mordin's hospital on Omega, despite it being in a slum, and being a limited facility.
