I think so too and I certainly hope so, however being mammal does not mean that they have to look human. Elephants, dogs, cats, horses, whales, giraffes, warthogs, etc. are all mammals too. They don't exactly look like humans (and vice versa).

the difference is Tali and all quarians are a humanoid creatures highly evolved, just like if dogs evolved over millions of years with no interference from humans, would, like monkey eventually become humanoid in appearance

I could see something like a ridged spine, but I think that people are reading too much into Grunt's statement.  We already know they have an endoskeleton anyway.

It could also be a reference to denser muscle/tissue mass and not necessarily thicker/tougher skin (though it could be both as well, or something entirely different).
