Perhaps but the ship was empty of crew by the time the deed occured. Tali works off on her own. Either Grunt or Zaeed might have noticed but they're not one to talk.
Jack is a maybe, I doubt she'd leave her hole so at most I can only imagine her hearing footsteps leaving the engine room.

That's merely supposition, Grunt wasn't very specific on why Quarians aren't as squishy as us.. Could be because they're always int heir suits, could be because they have a dense bone structure.... hard to tell.

It's 50/50. The quote people are running off of wasn't specific and his memories come from well beyond the 300 years the Quarians were stuck in suits.
Either way, it takes more than a finger's length to sever a Quarian spine unlike a human.

But seriously, I love the fact that you can summon Tali up to your room, but it would be much more engaging and touching if she gave some indication of what happened like: "I'll come by your room later maybe, Shepard."
And if you could actually hear Shepard say to her: "I love you, Tali."
