(Although I prefer my Minsc stupid and funny.
He frequently got his a** handed to him unfortunately, but after some time I learned how to use him properly. That is, my character -> tank, Sten -> heavy hitter. No matter that the enemy would attack him anyway.
I liked the way he would question my orders. That created sort of a tension in the party, I also was surprised to learn that the only thing he liked about Ferelden were cookies. Well, everyone's got their dirty secrets.

I will say that Sten is someone who you're only going to learn a limited amount about if you don't actually take him with you in the active party. Unlike other party members, he doesn't divulge a lot of information about the Qunari when asked directly. What happens instead is that, while adventuring around the world, he will comment on things he sees and mention certain things when bantering with other party members -- and THEN you can ask him about those things later, but only then.
This doesn't mean you can't talk to him about other things, but this is the only way you're going to get him to talk about the Qunari specifically.
In my first completion of the main quest I managed to gain enough trust to be able to help Sten with his dilemma. Your post makes me wonder, if I can even learn more about him.
Generally speaking that's a really cool RPG-feature, that you can after certain experiences refer to them in conversations with an NPC. I wonder if this was included in earlier games? New topics based on game events make the henchmen much more intersting and makes me take a greater variety of group members with me. I bet it will take some playthroughs to see the majority of dialogues. Is this mostly Sten, or also other NPCs?

They should all be that way. Not in your party? Good luck getting them to trust you. Too bad it doesn't actually work like that for the rest of the NPCs.

On the bright side, every other char is pretty good. Even Sten can grow on you, I didn't like him at first either.
Oh and after all my talk about not using Wynne and how much I didn't like her before the game came out... She is awesome. Up there with Alister and Leliana

She is my second favorite after Sten, a firm believer in natural selection and winner-takes-it-all. A refreshing change of pace after some rpgs, where you are presented with 5 dialogue options, 4 of them sounding like a selfless boyscout/mother Theresa and the last effectively saying kill the houses burn the women rape the children because I'm evil MWAHAHAHAHA.
------------------------------------------------------ SPOILER -------------------------------------------------------------
Best example would be Lothering merchant, whiny chantry nut tells you some bad bad merchant is taking advantage of the situation. Just what Morrigan says, plus I missed the option of bashing her around a bit.

Stebenator:
If you are gunning for effectiveness just take the 3 mages + Alistair team. Once you learned which spells make the casting mage an instant target of a manhunt and you know what to expect from bosses( ie. after the first playthrough ), the AI won't challenge your intelligence even on nightmare. It's really just a matter of personal preference.

With him, the more questions you ask about his culture and the less judgements you make on it without hearing the whole story really help get him to like you. All 3 of my characters are total goody two shoes and I have him at full approval within the first half of the game. Once you know him, he's the easiest to get approval for, IMO.
SPOILER WARNING
If he likes you, in the event where he can turn on you in Haven, he doesn't. He inquires about you, and says that he trusts you with his life, but he's worried about you making the right decision.
END SPOILERS
Hands down my fave, he'll never be out of my party.

I like Sten but he talks too much.
Everyone talks too much in DAO, why cant people just point at a big castle and say stuff like "enter and kill" and let me be on my way?
Diablo is that way friend.

I agree, the game should also have guns.
