And of course gay/lesbian romances. Joker would be nice, and I guess another female, though preferably *not* Samara. It doesn't necessarily need to be a squad member (could just be a crew member...like, again, Joker), since the romance conversations seem to happen on the ship anyway (with a handful of exceptions), though I guess it's preferred to have a squad member.
I'd be much more interested in seeing squad members develop relationships with each other.

You're forgetting the "If you didn't have an ME1 LI, but have a ME2 romance there needs to be a great scene for waiting for the one you wanted".
I do agree that they should stick to fleshing out the current LI's rather than providing new ones, but if Bioware is going to cater to the people who didn't play the previous two installments from the trilogy, they'd have to provide new LIs, or make it so the old ones are romancable (again, which kind of begs that they be returning party members as well) in ME3 in order for them to get something out of it. Seems a bit sketchy, but who knows.

As for something new? Well, lesbian romance was sorta left to fall by the wayside a little bit for part 2, as a lesbian gamer it'd be nice to have some kinda option in part three that could resonate well with me yadda yadda yadda...

I've read it here a gazillion times and thought I would eventually figure it out, but I havn't. What is LI?

Well that's nice. I don't care for any of the ME1 LIs, and that's putting it lightly. They were my least favorite characters of the entire group - I can barely bring myself to like them, let alone love them. I didn't think the scene in ME1 was all that awe inspiring either, but to each their own. .
From my own experience, Garrus' romance is one of the more entertaining and ultimately meaningful of any BioWare game romance I've experienced, because he doesn't take himself so seriously, which for me is key. Garrus is extremely charming, funny, and awkward, but sincere. I've liked him since ME1 (bias turian admirer), and he only got better character-wise in ME2, so I couldn't be happier with the outcome.
I've not played any of the other ME2 LIs, but I understand that Thane's is also very well done. I did watch my brother romance Tali and I thought it was cute, but then I like Tali a lot because she's just a genuinely nice person with good intentions.
But as I said before...there will still be people picking up ME3 cold turkey, having not played either ME1 or ME2, and it stands to reason that there would be new LIs for those people. It wouldn't be good marketing not to. That might not be what I want, but those players do have to be accounted for to a certain extent.
