Hey
I was just wondering once you've completed the game can you carry on?
and do side quests to gain more EXP? or does the game end and you
cannot carry on?

You can continue and do sidequests when you complete the game.

Yeah, I went to every planet I could find on the map and even revealed a whole new star cluster on one mission (but it just had one planet in it).
I got enough experience to go up two levels. I'm up to level 27 on just one playthrough with an imported Shepard from ME1 (which only gave me a level 2 start because he was only level 37 in ME1). So that almost got me the get to Level 30 achievement but not quite without having to play the game twice. Maybe with more DLC I can get that achievement without doing a second playthrough...
I only play to do an entire replay of the game when I go a full replay of ME1 as a female Shepard to see the difference.
