What accessories should I pick up?
And what PS3 exclusives (besides Metal Gear and Drake's Futurne) do you suggest?
Any other tips on buying a PS3 you could throw my way would be much appriciated.

Get some extra controllers, and try to find an old backwards compatible PS3. You can upgrade the hard drive for cheap, so you'll probably save money in the long haul.

Games I recommend is Resistance 1 and 2, Killzone 2, Demon's Souls (as Godak suggested), inFamous, and the Uncharted titles. Warhawk is a pure hit or miss if you like it and there's a demo of the game on PSN. As Zaim298 pointed out, get a headset but you will not need a ps3 keyboard as any USB keyboard for PC works fine with the PS3. Wireless Keyboards are a hit or miss, while a Logitech wireless k/m combo might work for the interface in XMB menu usage it might not work at all in Unreal Tournament 3 for PS3.
There's also PixelJunk Monsters and Shooter, which is great past times. And then there's P.A.I.N. which is fun for social gaming.

Use the 50$ or so you'll save from buying the 250gb on upgrading the the 120gb hard drive -- just don't get a solid state drive unless you like wasting money

You can plug any usb keyboard onto the ps3 but the little cutsie ones that fit on top of your remote can be really convenient if you don't mind the price. The headset is only necessary if you are into multiplayer, you will never use it otherwise.
Do get an extra controller so you can couch co-op games like Little Big Planet. It is ridiculously fun!
You will also want to pick up Little Big Planet, Naruto Ultimate Ninja Storm (if you are into anime) and God of War Collection. More recent must-have titles are Uncharted 2 and Assassin's Creed 2.

My games collection so far, based on suggestions from friends: Uncharted 1&2, Burnout Paradise, GRID, Folklore, X-Blades, Star Ocean 4, FFXIII (pre-ordered), LittleBigPlanet, and Dante's Inferno (Divine Edition). They're trying to talk me into Demon's Souls, but it's got a combat system that apparently takes some getting used to. I'm still trying to get used to the dinky controller (big hands). Since I play alone, I got a USB keyboard as well so I can more easily chat with my friends (sometimes the PS3 is a chat device while I game on PC.)

Think i'll rent demon souls before I buy it, strikes me as a love it or hate it kinda game, although it appears to be right up my challenge (as an old school gamer I miss challenge!)

Oh gosh I wish I saw this earlier
First your Bluetooth will work with your PS3 so that will save you a lot of money. But even if you get a game that comes with the Bluetooth PS3 headset that bluetooth will work with your phone. I'd go with the 250 GIGs. Also you can use your own keyboard if you want for the PS3 or buy the one that connects to your PS3's controllor.
Also unlike the Wii and 360 the PS3 will come with a charge and play USB so you're covered there.

I've only seen one bad review for Demon's Souls, and that was from Famitsu. I've heard people talk crap about it when they first get it, but after a while they usually admit that they were wrong, and that you just need to be patient and take the time to understand the game mechanics.

The Playstation 3 is honestly the cheapest system on the market. Even when the PS3 was as expensive as it once was, I can let you know what it comes with and what you can also use on it you end up paying more for the other systems.
Kind of like the Wii, when I got it I thought yeah it was cheap but then I had to go buy the acessories or it wouldn't work or I'd keep having to buy batteries. The 360 you need the charge and play kit which is known to die out after a year. The PS3 comes with an USB Charge and Play Kit before I bought the PS3 I was assuming you had to buy a kit as well seeing Best Buy advertised it but yeah, you don't.
Also the Internet on PSN is free, you don't have to pay to play other people like Live. Netflix is now on the PS3 and as an owner of all three systems I can tell you, you get more bang for your buck.
Also another nice thing, is you don't have to order or get a Data Transfer Kit for the PS3 if you buy a new PS3. For example the 360 all content is locked to the console. all you need is an Ethernet cord and all your content is transfered into the new console and HDD.
The 360 your content is sync'd to your 360 so you have to get on the phone and call India and hope they understand you to get your content back on your new 360 otherwise your forced to log onto live to play your saved games or DLC which has the content installed on it.
To make matters even better, there is no PS Dollars like Xbox has their points when it comes to buying things. Everything is in dollars and cents, enjoy!
