FemShep Options:1.
Thane- Introspective, but not angsty; a professional killer, but an honest romantic; spiritual, but worldly. Dangerous but sensitive. These contrasts appeal to me and are a great foil for my Shepard. He has an amazing voice and a subtle sense of humor that will hit you out of nowhere if you're not watching for it. And I adored how he expresses concern and interest in Shepard's troubles. And he's
hot.

Garrus- Awkward but adorkable. I don't like the way it starts out (the "blowing off steam" stuff) and that casual-(because-we-don't-want-to-admit-to-anything-else-just-yet) approach doesn't mesh with my Shepards, but I appreciate how the relationship is an evolution of friendship, and the culmination is very touching. Always good to have a snarky bro at your side, even if I prefer Garrus as a bro more than a romance.

Kaidan- I used to give this guy grief. He's not the flashiest character and I found him to be incredibly dull for a long time, but over the months I've come to appreciate that side of him. He's solid and attractive in his own way.
4.
Liara- I'd say she ties with Kaidan now. I used to give her a lot of grief as well -- found her easy, default, shallow, etc, but I'm easier on her now. She has endeared me. I think there's subtlety to her character that hasn't been explored to its fullest, and the comics/etc have helped with that. She has potential.
5.
Jacob- Yeeeeaaaargh. Jacob, you're a great bro, but your romance is just... yeah... you say things and they just. Yeah.

ManShep Options:I need to play through these. I've actually had trouble making up my mind as to whose I like better, which is a good thing. Jack's is the emotional one, Tali's is the awkward and adorable one, Miranda's is the eyecandy but still nuanced one... Ash was my ME1 favorite and I still love her character, so she may edge out first place, but overall I don't find any of them to be Jacob-esque "flops."
What I appreciate about all these romances, male or female, is that they each cater to a different taste. Variety is great.
