Easiest class to best Insanity?

You can be a biotic or a tech guy, but the quickest way to kill any enemy in the game is shooting your weapons, and the Soldier excels in this role thanks to the amazing Adrenaline Burst.
Vanguards and Adepts are also really good and fun, but they take a lot more effort and skill to be played right... it might take some time to figure how to play with these classes and you may get frustrated in the beggining... but once you get how to play these classes they prove to be as powerful and deadly as the Soldier.
TL DR: If you are looking for an easier and smooth run in Insanity, go as Soldier, get Hardened Adrenaline Burst, Shock Trooper and Warp Ammo.

It's those YMIR mechs that do me in though, kept dying on the prison ship against one of them until I abused it's stupid AI and slowness with pathing and ARush. Could not beat it with a rush and assault tactic.

Adrenaline Rush makes your guns put out more damage at a faster rate than anything any other class can manage with their powers.
AR really only improves the damage output on sniper rifles. What it mostly does besides soaking damage for you is it reduces the chances of missing headshots. You gain a damage boost, but your rate of fire is also drastically slowed down. It makes sense too, because you're not slowing down time around you, Shepard is just speeding up, but your weapons don't.
TL DR: If you are looking for an easier and smooth run in Insanity, go
as Soldier, get Hardened Adrenaline Burst, Shock Trooper and Warp Ammo.

I still feel like it's pretty nuts that drones work on Scions/YMIRs.

Unless you're ridic good at CQB, you aren't going to be getting both of those on the same playthrough. I would start a casual game, and keep reloading the tutorial mission to get brawler (meleeing then shooting everything).
Insanity is entirely possible to do on NG+, it just could lead to unnecessary frustration for many. If you can get past any of the first recruitment missions alright, you should be fine.
Actually, even on insanity it shouldn't be too bad. Equip the eviscerator, melee, go into adren rush, blast them. Eviscerator under adren rush 1-shots or nearly oneshots many enemies. Its risky and you'll die sometimes, but you keep the progress if you die. Once you get heightened adren rush you can even use it to walk to somewhat close enemies, melee, then shoot.
Eviscerator is a crazy powerful tool for the soldier, especially since it is so much more powerful than the katana.

- It can go where you can't. Like up on balconies where heavies often fire from.
- Rocket wielding enemies tend to hurt themselves when attacking the drone.
- It can stun an enemy charging at you even when it still has armor/shields/barrier
- It keeps tough enemies, particularly Scions and Praetorians, locked up for a long time. Even Harbinger has a tough time dealing with it, though too a lesser extent.
- Husks in general seem to crowd around it, and abominations explode when they attack it.
Now if you take Dominate as a bonus power, things really get interesting. A dominated enemy occupies at least one of the enemies around it, so combined with combat drone, that's 3 or more enemies who aren't firing at you. This is not only great for keeping you alive but also for keeping your squad alive. And as long as you're careful about managing recharge times, you can control the battlefield in this way almost indefinitely.
